Quick Snacks That Don’t Need a Full-Blown Write-up
Despite this past week being mad hectic, I still managed to throw together a couple quick snacks that are so easy and tasty, that don’t need an entire recipe write-up or post. Which is why I’m lumping them together in one post.

I suppose I could post them up as two different snack recipes with a step-by-step breakdown, because they in no means coincide in cuisine in any way. But that would mean I’d have to get all intricate with the photography and do a little bit of this and a little bit of that with my writing, and I’m just not feeling that right now.
Aight, here goes.
1. Mushroom Fingers
For these babies, I heated up some frying oil in a medium-sized skillet.
I sliced up shiitake mushrooms and dipped each one in all-purpose flour, then a flaxseed meal/water and almond milk mixture, and then coated with panko breadcrumbs, before frying.
After I fried each one for a few minutes on each side, I removed them from the oil and dabbed with a paper towel to soak up some oil. I dashed sea salt over them and squeezed lemon on top.
Then I ate that shit. Quickly. Very quickly.
2. Elote
For this gift from god, I sparked up the old broiler to high (since I don’t have a grill). Then I took a few corn on the cob and broiled them for about 6 minutes on each side so that some of the kernels blackened.
When ready, I brushed them with a generous amount of Earth Balance butter and Just Mayo mayonnaise. I coated them with chili powder, lime juice and topped with cilantro and salty-lemon-infused tofu crumbles.
Then I went to town.
